Sesame seed, pepita, sunflower seeds – toasted in dry pan over low to medium heat, tossing the pan vigorously every few seconds.
Toast separately as each seed needs a different length of time to become crispy and fragrant, but not burnt. The sesame seeds when heated will start to release oil and clump together.
This toasted seed mix is a good accompaniment to roasted pumpkin and/or toasted root vegetables – e.g. sweet potato (and what else?)
